Why this recipe is soothing for PCOS symptoms:

Brassicas: Cauliflower and kale are rich in folate, vitamin C, vitamin Bs, K, iron, copper, calcium and potassium. Nutrients needed for optimal metabolism and hormone balance.

Cauliflower is rich in the phytochemical sulforaphane and plant sterol such as indole-3-carbinol. Together they serve as anti- diabetes and anti-cancer agents. Additionally they have high fiber content and fiber binds to excess estrogen helping with its elimination from the body.

Lentil: High in protein, iron, potassium, folate and fibre, lentils are a wonderful addition to an anti PCOS diet. They are amazing plant based protein source and folate is essential for optimal egg function and ovulation.

Ingredients:

1 1/2 Tbsp Extra Virgin Olive Oil

1 small Yellow Onion (diced)

2 stalks Celery (diced)

2 Carrot (medium, peeled and diced)

3 Garlic (cloves, minced)

1 small Cauliflower (chopped into florets)

  Kale Leaves (chopped)

4.5 cups Vegetable Broth

1 1/2 Lentils (cooked or canned)

Sea Salt & Black Pepper (to taste)

Directions:

Heat the olive oil in a large pot. Add the onion, celery, and carrots. Cook for about 10 minutes, or until veggies are softened. Add the garlic and cook for 2-3 more minutes.

Add the cauliflower, kale, and vegetable broth. Bring to a boil then reduce heat to a simmer. Let simmer for 20 minutes.

Stir in the cooked lentils and season to taste with sea salt and black pepper. Divide between bowls. Enjoy!
